Hoy continuaremos ese relato aproxim\u00e1ndonos a la Baja Edad Media, un \u00e9poca en que la literatura gastron\u00f3mica comenz\u00f3 a tener una actividad relevante. Efectivamente, la Baja Edad Media destaca por la naciente literatura propiamente gastron\u00f3mica. Esta \u00e9poca ruda y un tanto oscura, se define sin embargo literariamente como la de los ideales caballerescos y del \u201camor cort\u00e9s\u201d. La poes\u00eda de este tema fue abundante y elevada, y en cierta medida se explor\u00f3 tambi\u00e9n el tema de los pucheros y los productos que en ellos se cocinaban.<\/p>\n<p>Algunas obras son de especial minuciosidad y merecen ser nombradas.<\/p>\n<p>Un catal\u00e1n de la \u00e9poca llamado Rupert de Nola, y que posiblemente fue cocinero de Alfonso V el Magn\u00e1nimo, escribi\u00f3 el libro de cocina m\u00e1s antiguo que se conoce en la actualidad, el \u201cLlibre de doctrina per a ben servir de tallar i del art de coch\u201d. La obra parece haber tenido varias ediciones, &#8211;a juzgar por algunos cronistas, como Torres Amat&#8211;; una de ellas, perdida, databa de 1477 y fue realizada en Toledo. Actualmente, la edici\u00f3n m\u00e1s antigua que se conserva es la de Carles Amor\u00f3s, de 1520, que se guarda en la Biblioteca Central de Barcelona. Originalmente, esta obra se escribi\u00f3 en catal\u00e1n pero fue traducida al castellano con el t\u00edtulo \u201cLibro de guisados, manjares y potajes\u201d y editada por primera vez en 1525. Despu\u00e9s aparecieron numerosas reediciones, hasta el extremo de superar al mism\u00edsimo Quijote de Cervantes.<\/p>\n<p>Los guisos de la Baja Edad Media en la Espa\u00f1a peninsular siguen siendo abundantemente especiados, algo que era muy recurrido e incluso abusado en esa etapa hist\u00f3rica, al igual que lo fue en la \u00e9poca romana.<\/p>\n<p>La gastronom\u00eda diet\u00e9tica tambi\u00e9n fue muy recurrida, y en este sentido podemos citar una receta original de Rupert de Nola, extra\u00edda del libro \u201cDiscurso del buen comer andaluz\u201d, del doctor Gabriel S\u00e1nchez de la Cuesta:<\/p>\n<p>PARA LOS ENFERMOS QUE HAN PERDIDO LA GANA DE COMER<\/p>\n<blockquote><p>\u00abToma cuantas guindas quisieres y p\u00f3nlas en una caza al fuego, y echar\u00e1s agua de s\u00ed, y d\u00e9jalas cocer en esta agua hasta que se tornen muy tiernas y parezcan blancas; y despu\u00e9s echa a mal aquella agua suya en que se cocieron; despu\u00e9s toma un cedazo de cerdas muy ralo, que se pueda colar y fregadas tanto con las manos que pasen todas. Despu\u00e9s toma para cada una libra destas guindas, as\u00ed preparadas, media libra de az\u00facar y m\u00e9zclalo en su caza al fuego manso; siempre tray\u00e9ndolo con una ca\u00f1a hasta que sean cocidas; y despu\u00e9s ap\u00e1rtala y pon este letuario [eletuario es, seg\u00fan el doctor S\u00e1nchez de la Cuesta, la verdadera mermelada espa\u00f1ola ya en el siglo xv] en vaso vidriado bien tapado; puedes si quieres poner alg\u00fan clavo y un poco de canela en \u00e9l.\u00bb<\/p><\/blockquote>\n<p>Un libro no menos c\u00e9lebre de la cocina espa\u00f1ola medieval es el Arte cisoria o de cortar con el cuchillo, tambi\u00e9n de un contempor\u00e1neo de Rupert de Nola, el enigm\u00e1tico Marqu\u00e9s de Villena. Esta obra no fue publicada hasta 1766, en que la sac\u00f3 a la luz la Biblioteca del Escorial; posteriormente fue reeditada en Barcelona en 1879.<\/p>\n<p>Otras obras gastron\u00f3micas que cabe nombrar, son el Libro del arte de cozina de Diego Grande, publicado en Madrid en 1599 por Luis S\u00e1nchez; dos libros catalanes de entre el siglo XII y el XIV: el Llivre de Sant Soul de Pere Felip, y el Llivre del ventre, que pertenece al convento de Ripoll.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>En el art\u00edculo\u00a0anterior hicimos un acercamiento a la gastronom\u00eda medieval de \u00e1rabes y cristianos en la Pen\u00ednsula Ib\u00e9rica.
