En esta ocasi\u00f3n, siguiendo el orden cronol\u00f3gico, haremos un viaje retrospectivo a la Edad Media, para conocer la cocina cristiana de la \u00e9poca y la que nos lleg\u00f3 a trav\u00e9s de los \u00e1rabes.<\/p>\n<p>La Hispania aport\u00f3 a Roma sabores nuevos y, de forma an\u00e1loga, los \u00e1rabes trajeron a Espa\u00f1a productos desconocidos, como los condimentos procedentes de la India y Persia, as\u00ed como nuevas formas de guisar los alimentos.<\/p>\n<p>Dice don Dionisio P\u00e9rez, un relevante gastr\u00f3nomo espa\u00f1ol conocido como Post Thebussem:<\/p>\n<blockquote><p>\u00abLa verdad probada es que los cruzados, cuando regresaron, trajeron a Sicilia e Italia los primeros naranjos y limoneros, pero, en Espa\u00f1a, hac\u00eda ya casi dos siglos que se cultivaban. Y otro hecho probado es el de que hasta el siglo XVI no se extendi\u00f3 en Provenza el cultivo del naranjo. El naranjo dulce vino m\u00e1s tarde de China, tra\u00eddo por los portugueses. Los \u00e1rabes trajeron tambi\u00e9n el azafr\u00e1n, que encontr\u00f3 en el suelo espa\u00f1ol zonas admirables para su cultivo; trajeron la nuez moscada, que Avicena llama \u00abjiansiban\u00bb o \u00abjansivan\u00bb, que significaba en \u00e1rabe \u00abnuez de banda\u00bb; trajeron la pimienta negra, que los romanos no utilizaron y que sus bot\u00e1nicos citan s\u00f3lo de referencias. Y, sobre todo, trajeron la ca\u00f1a de az\u00facar y el az\u00facar, antes que se conocieran y produjeran en las islas de Rodas, Chipre, Creta y Sicilia, bien avanzado ya el siglo IX\u00bb.<\/p><\/blockquote>\n<p>Algunos libros de cocina \u00e1rabes han conseguido llegar y ver la luz en nuestros d\u00edas gracias a trabajos de investigaci\u00f3n, como los de Rodinson y Levi Proven\u00e7al. Tambi\u00e9n escritores de renombre, como Claudio S\u00e1nchez Albornoz y otros, publicaron textos culinarios que se atribuyen a diversos personajes de la Espa\u00f1a musulmana, como Ibn Razin (natural de al-Andalus) y Abu Zakariyya ibn al-Awwam (agricultor sevillano del siglo XII-XIII).<\/p>\n<p>Es de destacar la actividad po\u00e9tica que los \u00e1rabes de al-Andalus dedicaban a la gastronom\u00eda. Recitaban y cantaban no s\u00f3lo a diferentes productos agr\u00edcolas, como la alcachofa, sino tambi\u00e9n y muy especialmente al vino, que resultaba un tema tradicional en la literatura ar\u00e1biga.<\/p>\n<p>La original cocina \u00e1rabe debi\u00f3 quedar influida y modificada por la de los moz\u00e1rabes y, de igual forma, los cristianos del norte habr\u00edan notado intensamente la influencia de \u00e1rabes y mud\u00e9jares.<\/p>\n<p>En aquella \u00e9poca la comida copiosa debi\u00f3 ser la t\u00f3nica habitual, a juzgar por el testimonio de las Partidas de Alfonso X el Sabio, cuando dice \u00ab&#8230;los perlados deben ser mesurados en el comer, e en el beber\u00bb, y a\u00f1ade que \u00abel comer dem\u00e1s es vedado a todo ome, e mayormente al Perlado, porque la castidad no se puede bien guardar con muchos comeres e grandes vicios y que non conviene que aquellos que han de predicar la pobreza, e la cuyta que sufri\u00f3 nuestro Se\u00f1or, que la fagan con las fazes bermejas, comiendo e beviendo mucho\u00bb.<\/p>\n<p>La variedad del repertorio gastron\u00f3mico puede muy bien tomarse del Libro del buen amor (1330), del Arcipreste de Hita, en sus poemas sobre el ej\u00e9rcito de don Carnal y do\u00f1a Cuaresma, donde figuran buen n\u00famero de alimentos vegetales, animales y derivados, tales como \u00abfaysanes\u00bb , \u00abce\u00e7inas\u00bb, \u00absibias\u00bb,\u00abangiellas\u00bb&#8230;<\/p>\n<p>Es de notar, que todos esos alimentos s\u00f3lo pod\u00edan ser tomados de mano de \u00abmoro\u00bb o \u00abcristiano\u00bb, pero jam\u00e1s de jud\u00edo, que era en aquel tiempo gente apestada. As\u00ed, la reina Catalina, que gobernaba durante la minor\u00eda de edad de Juan II, dict\u00f3 una Pragm\u00e1tica (citada por Amador de los R\u00edos) advirtiendo a los jud\u00edos en el siguiente sentido: \u00abning\u00fan jud\u00edo nin jud\u00eda&#8230; les embien [a los cristianos] presentes de fogaldres [pastas], nin de espe\u00e7ias, nin de pan cozido, nin de vino, nin de aves muertas, nin de otras carnes muertas, nin que sean de comer de pescado muerto, nin de otras frutas, nin de otras cosas muertas que sean de comer\u00bb, lo que da una idea bastante clara de c\u00f3mo debieron sufrir los jud\u00edos esa especie de estigma que arrastraban por raz\u00f3n de su etnia.<\/p>\n<p>Continuar\u00e1<\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u00a0 \u00abQue la comida sea tu alimento y el alimento tu medicina\u00bb Hip\u00f3crates En nuestro anterior n\u00famero inici\u00e1bamos una serie de art\u00edculos sobre cultura gastron\u00f3mica, y hac\u00edamos un acercamiento a la historia de la cocina hispanorromana y visigoda.
